Double Butter Oatmeal-Butterscotch Cookies

These cookies are so delicious, I just had to share the recipe!
  • 3/4 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 heaping teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 1/3 cups butterscotch chips

Directions

  1. Preheat oven to 350 degrees.
  2. Beat butter, and sugars together. Add the eggs and vanilla, beating well.
  3. Stir together the flour, baking soda, cinnamon and salt.
  4. Gradually add the flour mixture to the butter mixture. Stir in the oats and the butterscotch chips.
  5. Put mixture into freezer for 5-10 minutes. This helps to keep the cookies from spreading out too much as they cook.
  6. Drop by teaspoonfuls onto an ungreased cookie sheet.
  7. Bake for 8 minutes, just until the cookies have set and the tops have lost their sheen.
